Damascenone

At a glance

Beta-damascenone is one of the "rose ketones," alongside the damascones and ionones. Present in rose oil at only trace levels, it is disproportionately responsible for rose's fruity, honeyed depth -- used sparingly for rosy-plum radiance and tobacco-like richness.
